Delicious fat food

I love food. I love it as much as I love my mom. Food is my friend. It is my soft comforter. It is my nightly shower. They are my squishy pillows. Does that make any sense to you? ehh. It may or it may not.

I love to cook and experiment with new recipes. More often than not I turn to Pinterest for new recipes. If you don't know what Pinterest is I highly recommend it. A few things I've made are Bell Peppers and Beef, Chicken Broccoli Braid, Stuffed Jalapeno Poppers with Bacon, Stuffed Bell Peppers filled with turkey sausage and brown rice. Those are just on the top of my head. I've made more, I just can't remember.

Today I wanted to share with you, or I guess myself since I have no audience, a recipe that I've tweeked to my liking.

Bell Peppers and Beef Chicken

I rarely ever have beef in my house. My house is mainly a pork and chicken place. Plus, I just love chicken so much more.

Ingredients:
1/2 red bell pepper
1/2 green bell pepper
1/2 yellow bell pepper
1/2 small white onion
1/3 cup of mushrooms
1 or 2 large tomatoes
2 chicken breasts
1 tablespoon of veggie oil
1/2 cup of water

Directions
1. slice all of the veggies into thin slices
2. slice the chicken thin as well
3. cook the chicken in a non-stick skillet with the veggie oil
4. once the chicken is cooked add all of the veggies and 1/2 cup of water
5. cover your skillet with a lid and let it simmer for 20 minutes, occasionally stirring
* Add more water if the water in the skillet starts to evaporate
6. Remember, the chicken should be cooked already before adding the veggies. Your veggies will be done once they are tender and there should only be a little liquid left, the chicken will be tender as well!

Sauce:
2 Tablespoons of water
1 1/2 teaspoon of cornstarch
2 Tablespoons of seasoning sauce, or soy sauce
2 teaspoons of sugar
2 teaspoons of orange juice

Directions
1. Mix the cornstarch and water in a bowl
2. Add the rest of the sauce ingredients to the water and cornstarch and stir
3. Once the veggies and chicken are done add the sauce and let it simmer for a few minutes until it thickens. After it thickens turn off the stove and serve it over a bed of white rice. Delicious! Enjoy!



A delicious summer drink to go with that meal would be a Snapple and Sprite.

I mix diet peach Snapple powder with water in a pitcher, finely dice 1 ripe mango, then add it to the pitcher as well and let it sit in the fridge for an  hour or so. The longer the better so the mango flavor can be infused! If you want, I would add a green tea bag as well. Once the drink is done I pour it in a glass with a little bit of sprite to give it that refreshing taste! Try it, you won't be sorry.
